Blueberry Cheesecake Eggroll
Ingredients:
Blueberry Sauce
2 1/2 Cups Blueberries
Juice of 1/2 a lemon
1 tbsp Sugar
Cheesecake Mixture
2 (8 oz) blocks cream cheese
1/2 cup sugar
1/2 cup sour cream
1 tsp pure vanilla extract
Pinch of salt
Other Ingredients
Egg roll wraps
Vegetable oil, for frying
powdered sugar, for garnish
Directions:
Mix blueberry sauce ingredients in a pan over medium heat until thickened. Remove from heat and cool.
Using a hand mixer, beat together cheesecake mixture.
Take egg roll wrap and lay in a diamond shape. Fill with 2 tbsps of cream cheese mixture and a big spoon full of blueberry mixture, then roll up.
Fill a pan with 2 in vegetable oil and heat.
Cook egg roll in oil for 1 minute each side.
Garnish with powdered sugar.
